The BEST Beef burgers

These are decidedly, the best beef burgers you will ever taste. Who decided? Me! I love them. So did Summer. 

Isabel just wasn't interested in dinner, she ate an apple. I think Brett liked them.

They are yumptious, scrumptious. There's no egg, or breadcrumbs so easy too, if you don't have any in your larder. All you need is BBQ sauce, of some sort (use tomato sauce if you have too) and worcestershire sauce. If you don't have that use soy sauce.

Here's how you can make them. It's easy.

The BEST Beef Burgers

400 - 500 grams of beef mince
1 onion, grated
2 cloves garlic, minced or finely grated
2 tablespoons barbecue sauce(I used a smoky one)
1 tablespoon worcestershire sauce
60 grams cheese, grated. (Any sort you have)
1/4 cup chopped parsley(Optional. Because some kids, like mine, don't like any sign of green)

Combine all ingredients. Best done by getting your fingers in the bowl and scrunching it all together.

Using an egg ring as a mould, press the mince mixture in to form burgers. Remove ring. Repeat until all burger mince has been used.

Fry or grill burgers until cooked through.

Curried mince and veg




This is a recipe that I have conjured up. It's a bit like a chow mein without the noodles, you could have it with noodles if you have them. I served it in a lettuce cup with some rice on the side. 

2 garlic cloves, crushed
115 grams onion, diced
olive oil spray
500 grams veal mince
2 Tblsp curry powder
150 gr zucchini, diced
110 gr cabbage, sliced
100 gr carrot, halved and sliced into half moons
100 gr frozen peas

Spray a large saucepan or deep fry pan,  with olive oil.
Saute onion and garlic for 2 minutes. Add mince and brown. Add rest of ingredients, give it a good stir. Cover and simmer for 20 minutes, stirring occasionally. 
Serve.

I cook a cup and a half of brown rice with a diced onion, a teaspoon of cumin, a teaspoon of turmeric and a bay leaf. Remove the bay leaf before serving.

You could exchange veal mince for whatever mince you have.

I weighed the finished dish and then divided by 6. 1 serve was 1/6th of the total weight.

Serves 6. 1 serve = 159 calories(just the mince curry and lettuce).

Asian Pork Meatballs


500 gr pork mince
4 shallots, sliced thinly
5 water chestnuts, finely chopped
1 garlic clove, crushed
1/4 cup fresh coriander, chopped
4 tsp soy sauce
3 tsp oyster sauce
1 tsp sesame oil
1 egg, beaten
1/4 cup plain flour
2 tsp peanut oil

Combine everything, besides the flour and peanut oil. Roll tablespoonfuls of mix into balls.
Season flour with pepper and roll meatballs in flour to coat.

Fry meatballs over a medium-high heat in the oil, turning, until browned and cooked through.

I had no water chestnuts, so I used 1heaped tablespoon of almond flakes I had left in the cupboard. 

I used olive oil to fry.

I didn't make one, but a dipping sauce wouldn't go astray! 

Izzy gobbled these up. Winner!!


Potato onions and coriander from the garden

If you have a small vegie garden, these potato onions (that's all that I know them as) are an excellent addition to add, if you can find them. They multiply from one bulb, so if I planted one of them, five or six or more would grow around it. I harvest them once a year and leave the smaller ones in the ground for more and more. I have that many I can just go out and pick and use like shallots when I need them. The mature onion is more bulbous than the ones here, anything from about a 10 to 50c piece size.

I picked lettuce leaves, small silverbeet leaves, parsley, rocket
 and coriander for a simple salad, with some cucumber added.
