Our Christmas

This time last week, about 8 o'clock in the morning, I was changing a sign in the main drag with a permanent marker.
It stayed there all week too, but yesterday, the day after Boxing Day, I noticed it was gone. Fair enough, I was surprised it stayed there that long! I hope it gave someone a smile at Christmas.
I'd wanted to do this for a couple of years and finally found the courage this year. I was trying to remain low key as I sticky taped my sign to the window, nervous but casual at the same time, considering it was directly opposite the cop shop.


It's always exciting for the kids when they first notice the street decos up at the start of December.

The girls and I, dropped into Carpenter Rocks, earlier in the week. Preparing the house for holiday renters. We have visitors from Melbs renting this week. January is pretty well fully booked.

We checked out the lights. There were two houses Summer flatly refused to get out at, well screamed at us, because there were dancing Santas out the front. She has decided that she will not change her mind about the matter next year either.

Entertainment at the Millicent Christmas Eve street party. Awesome.

Merry Christmas

We had a lovely Christmas shindig/street party at the neighbours house yesterday. We've been neighbours for thirteen years, and it's only been this year that I have socialised with them. They are lovely people and made us feel so welcome.



Santa dropped in, with goodies for the kids.

Summer charmed the pants of everyone when she sang Jingle Bells with another little girl. She has stage presence apparently. It was uber cute.

The past week and first week of the school holidays was a scorcher. Except for yesterday, we'd been at the swimming lake everyday! We are so lucky to have this awesome asset in our town.

We are as organised as we are ever going to be for Christmas. I have the urge to bake, but just seriously cannot be bothered! I am so looking forward to lunch at Mum's with all the family. Especially my brother who will be home in the next couple of days after his kidney transplant. We have so much to cherish and be thankful for this year.

Frittata love

Frittata is easy to make, plus it's healthy. I seem to be enjoying it more than I ever have. It makes a quick lunch, ready in about fifteen minutes.

I used to make the crustless quiches, that contain milk, cream or even flour.  Not to mention cheese and bacon!

Little did I know I could whip up something tasty, with fresh ingredients in half the time of the 'frittatas' I was making before. This is what healthy food is about. Simple, fresh ingredients. The only thing out of a container besides the oil,  is the egg. They come in their own natural container!

I was a little excited today, to see the first egg from our chooks we bought at the show this year.

I love my frittatas with capsicum. I use whatever I have in the fridge, like zucchini (sliced thinly), spinach or spring onions.

Fresh herbs or greens raided from the garden also get a look in.

This is a pretty loose recipe, meaning you could add what ever you like. I use at least 6-7 eggs for my 30 cm cast iron pan for a thin frittata. Add more eggs and fillings for a thicker frittata to feed more people. It will take a little longer to cook too.

I can highly recommend buying a cast iron fry pan. Our camping store sells them for around $25. Smaller pans are even cheaper, and I wouldn't mind a smaller sized one for those small jobs.

They never warp, provide a flat base, especially where frying eggs is concerned. They are heavy based, they hold heat, and last forever and a day, even longer! I find mine perfect or making frittata.

Simple frittata

6-7 eggs
A cup of diced capsicum. Or a mix of veggies.
1 tablespoon of olive oil
salt and pepper

Place half the oil in a flat fry pan on a medium heat. Add capsicum to the pan and cook for a few minutes.

Beat eggs in a bowl, then add cooked capsicum. Stir to combine.

Add rest of oil to the pan, and slip in the egg mixture.

Cook on a medium low heat until the egg starts to set. It should still be a bit runny on the top.

Place the pan under a hot grill and cook until the egg is set and starting to go golden on top.

Slice the frittata in wedges and eat!

This frittata had heaps going on. Mushrooms, asparagus, feta, red capsicum and spinach.

If you are using softer veggies like zucchini or spinach for example, add them to the capsicum at the end, just to wilt down.

Things like onion, mushrooms and garlic can be fried with the capsicum.

Crabbing at The Point

The kids love to go crabbing at Pelican Point. There is one part of the beach that is covered in rocks, and every turned stone reveals several crabs, scurrying for shelter. We collected them in a green castle bucket. I drew a line in the sand, then we laughed and squealed as we watched the crabs race back to the rocks, seeing which one would cross the line first. Good fun.

The girls and I spent a good part of Sunday morning wandering around the beaches of Blackfellows Caves and Pelican Point, while Brett and Jake went out fishing in the boat.
