White Christmas Slice

Need something sweet and christmassy to make? Make this! It's yummy!

1 cup self raising flour
1/2 cup plain flour
1 cup rolled oats
1/2 cup sugar
1/2 cup desiccated coconut
125 grams butter, melted
2 Tablespoons honey
1 egg, beaten

220 gram block of Cadburys Dream white chocolate(any white chocolate will do)
3/4 cup rice bubbles
80 grams glace cherries
60 grams sultanas*
1/2 cup desiccated coconut
1/2 teaspoon vanilla essence

Preheat oven to 160C. Grease and line a slice tin.

Combine the flours, oats, sugar and coconut in a bowl.

Mix the melted butter, honey and egg, then pour into flour mixture and stir until combined well.

Press the mixture into the pan and bake for 15-20 minutes until golden. Set aside in the tin and make topping.

Break the chocolate into squares in a microwave safe bowl. Melt the chocolate on 50%, stirring every minute until smooth.

Stir in remaining ingredients. Spread this mixture over the base while still warm.

Let cool in the pan, then place in the fridge to set,  before cutting into 20 even squares.


*You can use a mixture of craisins(dried cranberries) and pistachio nuts here for something a bit more fancy.

Begonia

Begonia semperflorens comes in shades of pink, rose, red and white. They'll grow to 25 cm in height and like a bit of shade. 

I have them in pots under the veranda on the back deck, and some in shady spots in the garden.

Jasmine

There's a jasmine plant growing on an arch by the side of the house, in between the lounge room and dining room windows. It's in flower at the moment and the fragrance is beautiful. With the weather warming up this week, I've had the windows open and it's heady scent is wafting inside.

I can smell it while I hang washing on the clothesline, a clothesline which hasn't been used much lately, with the rain over the winter. Spring is here, I've been looking forward to it.

What I'm really enjoying of late is taking a closer look at things, especially flowers. This climber has been here for about ten years, I never noticed the wriggly green bit in the centre of the flower.

I've been meaning to do something about this pot for a while, it's got scale or something. It's an elephant ears, there is one on the other side of the pergola that is doing very well. The last plant I had in this spot had the same thing, it's just not a good spot at all for a plant.

I cleaned up the pot and put some good soil from the compost heap in it, we went down to the hardware store and bought some pretty purple and white petunias. It's now out by the front door.

We had a spare petunia so we put it in the front garden next to the egyptian rose (Knautia) or pincushion flower, that I got from the bargain bin for a dollar a few weeks ago. It has come back to life beautifully.

Last week I bought these tulips in a gift pot at woolies, marked down to $5.50. We've found a place for these too, next to the crabapple tree, in the front yard.
