This salad is delicioso.
A perfect prawn dish for a christmas feast on a hot summers day.
2 large oranges
1 cos lettuce
500gr cooked prawns with tails
1 red onion, finely sliced
2 Tblspn red wine vinegar
4 Tblspn olive oil
1/2 tsp finely grated orange rind
1 clove garlic
Cut orange into segments.
Arrange lettuce leaves on a serving platter.
Top with prawns, orange segments and onion.
Place vinegar, oil, garlic and orange rind in a jar, shake well.
Drizzle over salad.
Serve with crusty bread.
