White Christmas Slice



Need something sweet and christmassy to make? Make this! It's yummy!


1 cup self raising flour
1/2 cup plain flour
1 cup rolled oats
1/2 cup sugar
1/2 cup desiccated coconut
125 grams butter, melted
2 Tablespoons honey
1 egg, beaten

220 gram block of Cadburys Dream white chocolate(any white chocolate will do)
3/4 cup rice bubbles
80 grams glace cherries
60 grams sultanas*
1/2 cup desiccated coconut
1/2 teaspoon vanilla essence

Preheat oven to 160C. Grease and line a slice tin.

Combine the flours, oats, sugar and coconut in a bowl.

Mix the melted butter, honey and egg, then pour into flour mixture and stir until combined well.

Press the mixture into the pan and bake for 15-20 minutes until golden. Set aside in the tin and make topping.

Break the chocolate into squares in a microwave safe bowl. Melt the chocolate on 50%, stirring every minute until smooth.

Stir in remaining ingredients. Spread this mixture over the base while still warm.

Let cool in the pan, then place in the fridge to set,  before cutting into 20 even squares.


*You can use a mixture of craisins(dried cranberries) and pistachio nuts here for something a bit more fancy.

Back to school and an easy Chocolate Slice

We've just gone back to school this week in South Australia. Izzy started back at kindy yesterday, a full day. Just what you want after two weeks of having both of them home. There's no worrying about if she was ready, I was ready.

We had a great holiday break, got some easter craft done, too much chocolate consumption and a catch up with our mothers group mates. It was great that easter fell IN the school holidays this year.

Sunday I had a bake up. There wasn't much to put in a lunch box. Instead of taking money out the bank to buy stuff they day before our big fortnightly shop, I baked with what I had in the pantry. Simple stuff. Nothing fancy.


I made my sultana loaf. Tea, sultanas, sugar and flour. I used a spiced chai tea in this one, and iced it with half a teaspoon of golden syrup mixed with little boiling water, then mixed with icing sugar.

Homemade crackers, these are very moorish. I will post the recipe soon, these are before I had cooked them.

This chocolate slice is easy to make with ingredients everyone should have in the pantry ready to go. It is also scrumptious.


Chocolate Slice

120 grams butter or margarine
1/2 cup sugar
1 cup self raising flour
3 tablespoons of cocoa
1 cup of coconut

Mix dry ingredients together.
Melt butter, pour over dry ingredients and mix well.
Press the mix into a slice tin. I greased my tin with oil spray.

Bake at 180C for 15 minutes.

When cool, ice with chocolate icing, sprinkle with coconut and slice!

Never have a problem finding someone to lick the spoon.

Zucchini Slice

I have never been too successful with zucchinis. I haven't had one off my plant this year because of end blossom rot, where the zucchini starts out well but slowly dies off from the flower end. I've had heaps do this, but the latest two on the plant are looking like they might be OK, fingers crossed.

End blossom rot is caused because of not enough calcium in the soil, and infrequent watering. 




Mum can grow them with her eyes shut, so I've been getting them off her. 

This is what I made with them, besides eating them with other veggies and making ratatouille, like I did when we went camping recently. 


Zucchini Slice

1-2 grated medium zucchini(about 2 and a half cups)
1 onion finely chopped
1 cup chopped bacon
1 cup grated cheese
1 cup SR Flour
1/2 cup oil
5 eggs
salt and pepper

Place all ingredients in a big bowl. Mix together well.
Grease a pie dish or cake tin.(I line the bottom of a spring form cake tin and spray with some olive oil spray).
Bake at 200 degrees for 30-40 minutes.

WeetBix Slice


This is a bit more of a cakey mixture because of the eggs. If you don't have any or don't want to add them, the recipe will still work without them.

You could even drizzle the slice at the end with melted chocolate or slather on some icing.


3 WeetBix, crushed
3/4 cup sugar
1 cup coconut
1 cup SR Flour

2 eggs, beaten
125 gr margarine, melted

Combine all first four dry ingredients.

Mix beaten egg into melted margarine, then add to dry ingredients.

Stir until well combined, then press into a lined slice tray(27 x 17 cm)

Bake for 20 minutes at 180 degrees.

Let it cool, before slicing up.


Depending on what your kids like, and what you have available in the pantry the following could be added at the start with the dry ingredients
  • 3/4 cup sultanas
  • chopped walnuts(not recommended if sending to school)
  • 3/4 cup choc chips(dark, milk or white)
  • 3/4 cup peeled apple, grated 
  • 3/4 cup of any dried fruit eg. peaches, apricots, cranberries, finely diced
  • 1 tablespoon of cocoa for chocolate slice
  • you could even mix the ingredients as long as there is 3/4 cup in total.

Vanilla Slice

Brett loves vanilla slice. There's a bakery in Heywood that he often stops at to get some, when he goes through in his truck, on the way to Portland. It's something he buys at markets too, when it's on offer. I'm a sucker for jelly slice.

He shoved a piece of paper in front of me, and asked if we needed anything, he had printed a recipe off the net. He was fully intending to make it himself, although admitted he might need some help. I thought then that it would be a lot of help, if he reads a recipe like he reads instructions for putting things together.

I thought I would take it upon myself to make it on Sunday morning, he'd had a few the night before, and I wasn't sure when he would be out of bed. It was an early morning for me, the kids were awake at six.

He was very happy when he ventured out at 9 am, to find it already made, and setting in the fridge. We had some after dinner, it was goooooood.  He'll be taking it with him to work everyday this week, if it lasts that long!

Vanilla Slice

2 sheets puff pastry
1/2 cup caster sugar
1/2 cup custard powder
1 1/2 cups cream
2 - 2 1/2 cups milk (I only used 2)
1 tsp vanilla

Icing
2 cups icing sugar
1 tsp butter (I used margarine)
1 tsp vanilla
Hot water

Place puff pastry on lined oven tray. Prick with a fork and bake for 10 - 15 mins at 220.
Put sugar, custard powder and cream into saucepan and stir over a medium heat until it starts to thicken.
Add vanilla and milk 1/2 a cup at at time and whisk continuously until the custard is thick.
Let everything cool slightly.
Place in a 22cm square tin, pastry, custard, pastry then icing.
Refridgerate. 

Can be eaten 3 hours after, but best after 12 hours. I used a slice tray and cut the pastry to fit, if you don't have a 22cm square.

Apricot Slice


This recipe comes from a very worn book, its 30 years old this August. Printed to celebrate the centenary year of the Rendelsham Primary School (1882 - 1982). I can't remember where I got this one from, probably a garage sale and I'm not really sure how long I've had it. It has a disclaimer on the first page that goes -


Somebody Goofed

Some of the recipes are still in pound or ounce measurements and fahrenheit temps, but has a handy conversion page at the start of the book. It contains some great recipes, and use it often.

It has sayings scattered here and there -

A man wrapped in himself makes a very small parcel.

One of the mysteries of life is how a boy who wasn't good enough to marry your daughter, can be the father of the smartest grandchild in the world.

Swallowing your pride occasionally will not give you indigestion.

I haven't played with this recipe at all, but have had the thought of using dried cherries and adding cocoa for a cherry ripe slice. 


Apricot Slice (P.Chapman)

Cream 4 ozs butter with 1 cup sugar, add 2 eggs, 1 cup plain flour,
 3/4 cup coconut, 1 cup chopped dried apricots, 1/2 cup milk and a dash of vanilla. Bake for 1/2 hour at 375 deg. Ice with vanilla icing and top with walnuts.


Using the conversion table 4 oz is 125 grams, and 375F is 190C.
