Monte Carlo biscuits are the bomb!

THESE biscuits are the BOMB! You have to make them.

If you don't your family and friends will never forgive you. As long as you don't show them this post, which I totally want you to do.

Monte Carlo biscuits

125 grams butter
1/2 cup sugar
3 tablespoons milk
1 1/2 cups SR Flour
1/4 cup custard powder
1/3 cup desiccated coconut

Jam and icing filling
75 grams butter
3/4 cup icing sugar
1 teaspoon milk
1/3 cup strawberry jam

Preheat oven to 180C.
Beat the butter and sugar until light and creamy.
Add the milk and beat to combine.
Sift the flour and custard powder, add with the coconut to the bowl and mix in to form a soft dough.

Roll about 2 teaspoons worth to make small balls.
Place on baking tray and press with a fork to flatten. Dip the fork in flour first, to stop it sticking to the dough.

Bake for 15 - 20 minutes.

Let the biscuits cool while you make the icing.

To make icing, beat the butter and icing sugar in a small bowl, Beat in the milk.

Spread one biscuit with half a teaspoon of jam, and half a teaspoon of icing on another, then join the two together.

Chermoula spice mix

I've never before had so many spices in my pantry. I am loving learning how to use them and all the different spice blends there are from all over the world. Not to mention all the delicious food I've been cooking up, and inevitably enjoying the heck out of tasting.

One spice mix I love is Chermoula. There are plenty of different versions around, but with basically the same spices, in varying amounts.

This is one that I have used to bake fish. It works. It's awesome, it's delicious, and will totally have you wanting to lick the plate. It would also be great with just about any other meat you want to whack it on, with or without the yogurt.

You will need:

500 grams to 1 kilo of fish fillets(I used hoki, also known as blue grenadier)
1/2 cup greek or natural yogurt

Chermoula paste
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 brown onion, finely chopped
60 mls of lemon juice
4 tablespoons finely chopped coriander or parsley, or a mix of both
2 garlic cloves, minced
1 tablespoon paprika
2 teaspoons ground turmeric
pinch cayenne pepper, optional
salt and pepper

Process all together to a paste, or near enough.

Using half a cup of paste, mix with half a cup of greek yogurt.

Spread all over fish in a baking dish and marinate for 15 minutes.

Cover with foil and bake at 190C for 20 - 30 minutes depending on how thick your fish fillets are.

Serve it up and enjoy!

You can refrigerate or freeze the leftover paste and rub it on steak or chicken on another night.
I have used the leftover paste in a red lentil soup before too, which worked out very well.

This is the first time I tried cauliflower rice. I didn't mind it. I grated half a cauliflower, you could use a food processor, then spread the cauli in a single layer on a tray and baked for 15 minutes at 200C, stirring and turning once halfway through.

Do you have spices in your pantry?

Are you a coriander fan? I love the stuff!

I love me a good list, and who dropped their guts?!

Are you a list lover?

I like lists. They help me get shit done.

I love the way I feel when I can cross things off my list. It keeps me on track. It makes me feel good.

I should make more lists.

Except when I get on the computer. Bloody facebook. Bloody distractions.

I have heaps of stuff to share on the blog, mainly stuff I've cooked. Do you think I can sit down at the computer and not faff about on everything else but? The answer to that, is NO by the way. I need to make computer job lists and stick to them.

Don't be too surprised when I bombard you with stuff to cook next week. As long as I don't get sidetracked and fart on about lists.....

I made a list yesterday.

1.To plant the punnet of Coriander seedlings I bought at Woolies a couple of days ago. Done! After I had to hunt down the contents of the empty punnet I found under the swing set. Izzy had planted the whole thing in a big blob next to her cubby house.

2. To chop up the gum tree branches that hubby cut AGES ago and just left them sitting there. Doneski! I have one very full green bin.

3. Take the bits of tin away, left over from the chook house extension, to the recycle centre. Done! Again, useless husband. I am not one to hold back on the husband bashing by the way. So frustrating.

4. Clean the back patio. It's been seriously neglected and just shit everywhere. Done!

5. Plant seeds that I saved from last years veggies. Done!! I even have photographic evidence.

I kicked arse yesterday. I am so proud of myself. Now I just need to put clean my car, inside and out on the list. I was a just a bit embarrassed when my Mum got in a couple days ago. Utter pig sty.

Speaking of pigs. I totally made someone spit out their coffee yesterday. Fist pump.

  • Go check out this gold on Instagram, and while you're there, if it's not already, turn that blue follow button to green!

Do lists make you happy?

What have you been kicking arse at lately? There's got to be something.
