Sunset soup


I've called this sunset soup because of the colours in it's vegetables. Pumpkin, sweet potato, red capsicum and carrot remind me of the hues in a good sunset.


It's very healthy, and makes a perfect veggie meal. I have just started the food combining diet. It is not so much a diet than a lifestyle change for the better. I was feeling toxic, bloated, unbalanced, tired. It was time to make a change. A few days in and I felt better already. It makes me feel better on the inside, which in turn will make me feel and look better on the outside.

I've done it before and don't know why, for the life of me I don't go back to it instead of taking the path of calorie counting, when it leaves me starving and not able to stick to it.

Basically the diet sees that carbs(starches) are not mixed with proteins(meat, cheese). I am having one protein meal, one carb meal and a neutral meal(mostly veggies or salad) a day. 

I had this for lunch as my neutral meal.

Sunset Soup

3 cups cubed pumpkin
1 chopped red capsicum
1 chopped red onion
1 sliced carrot
1 cup cubed sweet potato
5 cups water or stock
1 garlic clove, roughly chopped
handful of parsley

Place all but the garlic and parsley in a large saucepan and bring to the boil. Simmer rapidly for 15 minutes, or until the vegetables are soft.

Add garlic and parsley and process until smooth.


Garnished with cream, sunflower seeds and pepitas(pumpkin seeds)

Lunch yesterday, with cream, pea shoots and chilli oil

    Definately soup weather here too!! I have gone from having aircon on when we were in bed to getting out the bloody heater!! I almost made the pilot turn the plane around on Saturday night when we got back from Fiji!!
    I cheated and added my post from Friday as I am too damn tired to write a new one, hope thats ok!!

  2. It's cold here too :( We've been having soup and now I've gone curry mad. We ate it for 2 weeks, lunch and dinner while away and now I don't seem to be able to live without it. All other food seems a little dull....which reminds me, must make more today...

  3. I got all of these foods from supermarket yesterday, but didn't think to add all for soup, was just going to use pumpkin!! Great recipe and I'm feeling a bit blah, unhealthy so this is just the righteous food I need! Have a great Monday :) x

  5. Definitely one to try soon. I made pea and ham soup on Saturday and have frozen it into batches so I can pull out a serve anytime. I'm loving this soup weather!

  6. It's most certainly soup weather now, even up here in sunny Queensland. I made a spicy pumpkin soup with coriander yesterday and it really hit the spot. I'm going to have to try this recipe!

  7. What a beautiful name for your soup! I love all the ingredients and it has definitely turned into soup weather all of a sudden here in WA. I went to visit a friend in the south-west where we used to live over the school holidays and she gave me a gorgeous fat pumpkin that she grew in her garden and I've been waiting to use it for something special. Sunset soup here I come!

  9. Sunset soup... what a perfect name. Sounds and looks delicious too. I might throw all the ingredients into my crockpot... the vegetables really sound like they would blend very well together. Yum!
